We would like to be able to set up auto-reminders for unsigned eDocs with our PandaDoc integration. That would be a fantastic feature to have!

Did you try configuring auto reminders on the PandaDoc template? Please see this PandaDoc support article.

I am honestly not 100% sure that these auto-reminders will apply to documents created via the API. But I think they do.
